Ingredients for 20 pancakes:
200 gr all-purpose flour
8 gr baking powder
250 ml milk
25 gr butter, melted
15 gr sugar
a pinch of salt
acacia or millefiori honey
Mix the flour, baking powder, salt and sugar in a bowl.
Separate the eggs. Beat the whites to peaks and set aside. Beat the yolks and set aside.
In a bowl, combine the milk, egg yolks and melted butter. Add the liquid ingredients to the dry ones, beating to form a smooth batter. Then add the egg whites beaten to peaks. Let stand for 30 minutes.
Melt butter in a fry pan, then add a ladle of the batter, letting it expand to cover the entire bottom.
Cook until the pancake darkens and small bubbles start to form, then turn and finish cooking on the other side. Spread honey over each pancake and serve.
